Buckwheat Strawberry Oat Muffins

Hello November! 🙂

I would like to share a personal favourite muffin recipe with you today. What I love about muffins? Basically I feel that they are easier to make as compared to cakes. Making cakes are all about precision and I feel that they more technical as compared to muffins. If you do not like a certain ingredient for any muffin recipes, it is easier to switch it around. Don’t you think so?

For this recipe, I have made them so many times and have perfected it to my own preference! It’s so good and of course healthy as usual. Most of the ingredients are actually organic!

There are two versions for this recipe – Buckwheat Strawberry Oat Muffins and Buckwheat Blueberry Oat Muffins. I love them both equally well and it’s very difficult to pick one out of the two. If you can’t decide which one to bake, maybe you can incorporate both Strawberry and Blueberry into the muffins! Baking is all about experimenting. Have fun!

Buckwheat Strawberry Oat MuffinsHere is the recipe ..

Ingredients (for 6 muffins):

  • 1/2 cup + 2 tbsp buckwheat flour
  • 2 tbsp tapioca flour
  • 1/2 tsp baking powder
  • 1/8 tsp baking soda
  • 1/8 tsp salt
  • 1 egg
  • 2 ripe bananas (mashed)
  • 2 tbsp coconut oil
  • 2 tbsp maple syrup
  • 1/8 tsp vanilla essence
  • 2 tbsp unsweetened almond milk
  • 1/4 cup rolled oats
  • 2 tbsp sunflower seeds
  • 4 to 5 strawberries (cut into small pieces) or 1/2 cup of blueberries

Method:

  • Preheat the oven at 190 degree c (375 degree f)
  • Sieve all the dry ingredients (buckwheat flour, tapioca flour, baking powder, baking soda) into a large bowl
  • Add in the salt and mix them well
  • Beat eggs in a medium bowl, add in the rest of the wet ingredients (mashed bananas, coconut oil, maple syrup, vanilla essence, almond milk) and mix them well
  • All in the wet ingredients slowly into the dry ingredients and incorporate gently
  • Batter should remain slightly lumpy
  • Fold in the rolled oats, sunflower seed and strawberries (or blueberries) and mix them well
  • Divide batter equally
  • Bake for 25 minutes or till a skewer or toothpick inserted at the center emerges clean

Buckwheat Waffles with Strawberry Compote

I have been loving my buckwheat lately. They are used in many of my recipes and this is one of my favourites .. Buckwheat Waffles! They are super healthy and really easy to make.

Buckwheat WafflesHere are the ingredients ..

Ingredients (4 waffles):

  • 1 cup buckwheat flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp cinnamon
  • 1 tbsp sugar
  • 1/8 tsp salt
  • 3/4 cup unsweetened almond milk
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1 egg

Ingredients (super easy compote):

  • 3 tbsp organic strawberry jam
  • 3 tbsp water

Method:

  • Mix all the dry ingredients (flour, baking powder, baking soda, cinnamon, sugar and salt) in a large bowl
  • Beat up the egg in a separate bowl and add in the almond milk, coconut oil and vanilla extract
  • Mix them well
  • Add the wet ingredients into the dry ingredients a small portion at a time and mix them well.
  • When the waffle maker is preheated, spoon in the batter
  • Take out the waffles when they are cooked (approximately 2-3 minutes)
  • In a small pan, cook strawberry jam and water in small heat and mix them well
  • Drizzle it on top of the waffles and serve them with some fruits of your choice

Just in case you do not have a waffle maker .. no worries, this is a perfect batter for pancakes as well! Have fun making them! 🙂

 

Apple Crumble Pancakes

Hi all!

As usual I woke up early on my Sunday morning to enjoy my breakfast before my usual Yoga and Pilates lessons. I simply love my yoga lessons because I enjoy the pain of stretching, which I always call it my “Happy Pain”. It always gives me an adrenaline rush during every Yoga session and I couldn’t explain why. Overall exercising just makes me a happier person in general! 🙂

Here’s my breakfast for today.

Apple Crumble Pancakes

Ingredients:

  • 1 tbsp ground flaxseed
  • 2 tbsp water
  • 1 egg
  • 1 banana
  • 1/4 apple (grated)
  • 1 tbsp unsweetened almond milk
  • 1 tsp cinnamon powder
  • some olive oil
  • handful of blueberries
  • some almonds (chopped)

Method:

  • Add water into the flaxseed, mix them well and leave it aside for about 5 minutes
  • Mashed the banana in a large bowl, add in the ground flaxseed mixture, egg, apple, almond milk and cinnamon powder and mix them well
  • Heat up some a pan and add some olive oil
  • Add some mixture and cook for around 2 minutes or until there are small bubbles appearing on top, then flip it over (here I made pancakes of size no larger than 4 inches as they are easier to flip)
  • Serve them with blueberries and almonds (or anything you like) and top it off with some maple syrup

Non-Sweet Buckwheat Blueberry Muffins

I love breakfast .. who doesn’t? This is one of my favourite muffin recipes and I love making them at night so that I can enjoy them the next day. If you are looking for a sweet muffin, then this recipe is not for you but of course you can add some sugar or agave honey if you prefer some sweetness.

Non-Sweet Buckwheat Blueberry Muffins

Ingredients (for 8 muffins):

  • 3/4 cup buckwheat flour
  • 1/4 cup ground flax seeds
  • 1 tsp baking powder
  • 1/4 tsp kosher salt
  • 1 tsp cinnamon
  • 1 egg
  • 1/2 cup unsweetened almond milk
  • 2 bananas (mashed)
  • 3 tbsp coconut oil
  • 1 cup blueberries
  • 1/2 cup walnuts (chopped) (optional)

Method:

  • Preheat the oven at 180 degrees Celsius (350 degrees Fahrenheit)
  • Beat up the egg
  • Add the mashed bananas, almond milk and coconut oil into the egg and mix them well
  • Mix all dry ingredients (buckwheat flour, ground flax seeds, baking powder, kosher salt and cinnamon) into a bowl
  • Slowly add the wet ingredients into the dry ingredients and mix them well (add more buckwheat flour if required)
  • Stir in the blueberries and walnuts (or any nuts you like)
  • Spray the muffin pan with some olive oil
  • Divide the mixture into 8 portions and bake them for around 25 minutes
  • Use a toothpick to test whether they are cooked through

Non-Sweet Buckwheat Blueberry Muffin

There are many ways to eat these muffins. For me, I simply love eating them straight out from the oven or spread them with some blueberry jam or coconut oil. It’s really up to your preference.

Omelette Waffles with Raw Tomato Salsa

Hi everyone!

I made myself this super simple and yummy breakfast before my Yoga and Pilates lessons this morning. Franking speaking, I used to skip my breakfast. All I had was a cup of coffee before or during work and that was it. Ever since I started eating clean and staying healthy, eating a nutritious breakfast is a part of my life now. Even if I do not have the time, I will still try to grab something to eat, for instance milk with cereal or overnight oats. It can never get more simpler than that. Remember .. never ever skip your breakfast because it sets the tone for the day! 🙂

Here you go ..

Omelette Waffles

Ingredients (for 4 square Omelette Waffles):

  • 2 eggs
  • 2 egg whites
  • 1 mushroom (chopped)
  • 1/2 tomato (chopped)
  • 1 picnic ham
  • a pinch of kosher salt

Ingredients (raw tomato salsa):

  • 1/2 tomato (chopped)
  • 1/4 green pepper (chopped)
  • 1/2 lime
  • 1 tsp jalapeno pepper
  • some parsley (chopped)

Method:

  • Mixed all ingredients for the raw tomato salsa and leave it aside
  • Beat all the eggs and mix all the ingredients together
  • Heat up waffle machine and coat it with some olive oil spray
  • Pour some mixture into each side (I always use 1/3 cup as a gauge for each side) and remove the waffles when they are ready
  • Put them on a plate and serve them with salsa

As simple as that.  You can add any ingredients you like for instance broccoli, cheese, chicken, spinach, bell peppers, and the flavour possibilities are absolutely endless.

Blueberries Overnight Oats

Hi everyone!

I would like to share a very simple recipe with you which requires no cooking at all. All you need is a few minutes of your time and you will be able to have a delicious and healthy breakfast the next morning.

Actually I have tried making overnight oats several times and they have not been that successful. I guess the portion and the ingredients used are incorrect. Anyway cooking is about making mistakes but having fun along the way! After several attempts, I finally did it! Here are my favourite combinations so far.

Blueberries Overnight Oats

Ingredients (Basic):

  • 1/3 cup organic rolled oats
  • 1 tbsp chia seeds
  • 1/4 cup organic unsweetened almond milk
  • 1/4 cup light greek yogurt

Ingredients (On the right)

  • 2-1/2 tbsp organic blueberries jam
  • a handful of blueberries
  • some walnuts (chopped)

Ingredients (On the left)

  • 2-1/2 tbsp organic strawberries jam
  • a handful of raspberries and 1 strawberry (cut into small pieces)
  • some walnuts (chopped)

Method:

  • Put rolled oats in a mason jar (or any container)
  • Add chia seeds on top of the rolled oats
  • Drizzle almond milk over
  • Add greek yogurt, followed by the blueberries jam and blueberries
  • Leave it in the fridge overnight and top it with walnuts the next day
  • Mix them well before eating it

It’s so simple right? By the way, there are several overnight oats resting in my fridge right now. It’s simply a wonderful feeling to be able to make and share healthy food with your loved ones!

Banana Buckwheat Porridge

As usual, in a effort to keep my stomach happy, I had a healthy and clean breakfast! Come to think of it, I have been using a lot of bananas in my recipes .. Banana and Cinnamon Apple Waffles, Banana Buckwheat Pancakes, Banana Blueberries Muffins (which I will share later in my blog) ..

By the way, here are some Banana health benefits:

  • Good for Skin (Just what I need ..)

Anyway, here’s the recipe.

Banana Buckwheat Porridge

Ingredients (Porridge):

  • 1/2 cup buckwheat groats (raw buckwheat)
  • 1 cup unsweetened almond milk
  • 3/4 cup water
  • 1 banana (mashed)
  • 1 tbsp agave syrup (or honey)
  • 1 tsp cinnamon

Ingredients (Optional):

  • 1/2 banana
  • 1/2 kiwi
  • 3 strawberries
  • some blueberries
  • some almonds (chopped)
  • pinch of cinnamon

Method:

  • Boil the water in a pan
  • Add the buckwheat and cook for about 2 to 3 minutes
  • Bring it down to medium heat
  • Add smashed banana, cinnamon and agave into the buckwheat and mix them well
  • When the water is being absorbed, add 1/2 cup of almond milk into the pan and stir them continuously
  • Add in rest of the almond milk a while later (Never let the pan run out of liquid if not it will burnt)
  • Continue cooking for about 25 to 30 minutes until the buckwheat groats are cooked completely
  • Add more milk if necessary
  • Top it with any fruits or nuts you like and enjoy

Banana and Cinnamon Apple Waffles

Hi all! How was your weekend so far?

We are having our long weekend here as it was our Polling Day yesterday. I stayed up till almost 4am this morning, sitting in front of the television waiting eagerly for the live results. It was a landslide victory and I am really glad that PAP has such a strong mandate. 🙂

Obviously I had difficulty waking up this morning. However, I still managed to create this yummy and super healthy breakfast for my Dad and myself. Not only is it flourless, it is eggless as well! How amazing is that?

Anyway, I just bought myself a Tefal Waffle Maker yesterday and I was super excited to try it out. This is actually a multi-function sandwich maker and it comes with several plates options! The plates that come with the box are for waffles, small pancakes and toasted panini. The other collectible plates are donuts, pastries, triangle sandwiches .. and many more! I can’t wait to collect them all!

Here you go ..

Banana and Apple Cinnamon Waffles

Ingredients (about 6 pieces of square waffles):

  • 1 cup rolled oats
  • 1/2 cup unsweetened almond milk
  • 1/2 cup water
  • 1 banana
  • 1 tbsp ground flax seed
  • 2 tbsp water
  • 1/2 apple (cut into small squares)
  • 1 tsp cinnamon powder
  • olive oil
  • maple syrup

Method:

  • Mix the 2 tbsp of water into the ground flax seed and leave it aside for about 10 minutes (it will turn into a gluey mixture, a great substitute for eggs)
  • Put oats, almond milk, water, banana and flax seed mixture into a blender and blend them well
  • Heat up the waffle maker
  • Spray some olive oil evenly on the plates
  • Pour some mixture into the waffle maker (here I used a 1/3 cup as a gauge for each waffle so that they will come out evenly)
  • Take them out when the light turns green
  • Mix the apple with cinnamon and put them on top of the waffles
  • Drizzle with some natural maple syrup and ready to be served
