Banana Buckwheat Pancakes

I meant to wake up early today for my morning jog and some aerobic exercise but I .. overslept. I woke up at 10am and made myself some Banana Buckwheat Pancakes instead.

Buckwheat is gluten-free and a great alternative to white flour, thanks to its lower glycemic index and high levels of iron, magnesium, protein (including essential amino acids) and fiber. It is a major anti-aging beauty food. Want to stay healthy and youthful looking? Have more buckwheat then! You can simply do so many things with it, which I will share it later in my blog as well. šŸ™‚

Banana Buckwheat Pancakes

Ingredients (for approximately 9 pcs of 5 inch pancakes):

  • 1 cup unsweetened almond milk
  • 4 tsp white vinegar (distilled vinegar)
  • 1 cup buckwheat flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 banana
  • 2 tbsp maple syrup
  • 1 egg
  • 1-1/2 tbsp (22g) melted unsalted butter or coconut oil
  • 1 banana and some raspberries (toppings)

Method (for making the batter):

  • Add white vinegar to almond milk and leave it aside for about 5 minutes
  • In a separate bowl sieve flour, baking powder and baking soda together and add in the salt
  • In another bowl, mash the banana with a fork and add in the almond milk mixture together with maple syrup, egg and melted butter
  • Pour some of the liquid mixture into the dry mixture and mix it well.
  • Continue this process until all the liquid mixture is mixed well with dry mixture

Method (for making the perfect pancakes):

  • Slightly wet a kitchen towel and fold it into quarters
  • Heat up the non-stick frying pan at high heat
  • Before frying place the pan on top of the wet towel for approximately 5 seconds
  • Return the pan to the stove and reduce the heat to medium
  • Pour some of the batter into the pan (any size you preferred)
  • After a lot of small bubbles form on top on the pancakes, flip it over and cook the other side for another 1 minute
  • Remove the pancake from the pan
  • Before making another pancake, place the pan on top of the wet towel again for another 5 seconds and repeat this process until all the pancakes are cooked
  • Decorate the pancakes with any fruits you like and serve it with some maple syrup

There you have it. Delicious and healthy pancakes for breakfast!

Happy Sunday everyone! Who says pancakes have to be boring? šŸ™‚

Today I made some pancakes out of Aunt Jermima Pancake mix. I can make pancakes out from scratch .. but it is a little time consuming for me. So I used the time decorating them instead.

Ingredients for Pancakes:

  • 1 cup pancake mix
  • 3/4 cup milk
  • 1 tbsp olive oil
  • 1 egg

Ingredients for Decoration:

  • Whipped cream
  • Banana
  • Strawberry (cut into half)
  • Blueberries (cut into half)
  • Cheese (cut into thin stripes)
  • Baby carrots

Method:

  • Mixed everything well and cook different shapes of pancakes at low heat
  • No oil is required
